Oil pressure light

I have a 2016 People 250. Lately the oil pressure light will come on when I'm riding and the engine will stop. This has only happened twice and both times I've been in town. On inspection the oil was low the first time and I was able to add some oil, let it sit for a few and ride it back home. It happened again today, and when I checked the oil it was right where it should be. I put it up on the pegs and let it sit for a few minutes and it started up and I was able to ride it home. I'm wondering if a new gage is needed? Is there a way to test it? I wasn't aware the system was set up to do this as a way to protect the engine from inadequate oil, or is there something else going on? This is a water cooled scoot and it's not overheating. Ideas?

Welcome here!
The cheapest way to pinpoint your issue is to buy a NEW oilpressure switch (pls see pic), change it and see whats happened.
Second thing to do would be to measure scoots oilpressure with a gauge (pls see pic).

If both measures show a LOW pressure (under 2 bar) you got either a faulty oilpump or worn-out main bearings.

Third possibility (not very likely): a cable under your dashboard or on your oil pressure switch came off or is corroded and does some grounding, showing oil pressure low.

Curious - how low was the oil?

Sorry for the delayed response. Stig, the oil was in the middle of the dipstick both times. Regarding ordering a new oil pressure sensor, a new one costs around $38 US PLUS $83 shipping! I’m still looking and
 I haven’t ordered one yet.
I finally located it on the engine and I’m in the process of trying to figure  the best way to access and remove it. It appears I need to remove a radiator hose to get to it. Is there an easier way?
Also, here’s a question; does the oil pressure switch actually turn off the engine if the pressure is too high or too low? My reading (amateur here) of the wiring diagram indicates it only turns on the oil warning light.

To get this switch out without further disassambling I use a 21/22mm socket (pipestyle) or a ringspanner.

Once out see the next automotive shop (motorcycle shop) and ask for such a switch.
Don't believe the deskguy who wants to tell is an specific item.
No, its not, just stamped on bar value and thread has to match.

Yes, faulty switch will NOT switch off the engine. Warns you only of low pressure.
