I haven't really poked around on my handlebars to see how easy this would be, but has anyone removed the covers to leave the handlebars exposed?

No, have not. Why would you want to do that?

I did (Twice). Once to replace a bent fork and again to tighten the head stock.
I don't recall them being chrome plated and the welds were not beautiful.
Further repeated removal and installation of the self tapping screws only leads
to detoriation of the holes in the plastic parts and the plastic cover hides some
mighty big holes that would need to be trimmed out. However you can do
whatever you want.

I figured it wouldn't be pretty. I'd like to have places for gps, camera, cupholder mounts and it would be easier to just clamp to the bars like the motorcycles can do. I guess I'll look at the ram mounts. Or maybe I'll go with something like this:
