Will a kymco 500 side by side fit on a 5x8 trailer thanks in advance also should I get the efi version or a carbarator version thanks in advance

I don't think a 5x8 will be large enough.  It would be close.  If you can get the EFI, it is worth it.

Great Question!  I own a UXV 500SEi.  It is 62 inches wide!  At the outside of the rear wheels.  Website says 59"

I should have measured more carefully.  I looked UXV500 up on the website and took a rather casual measure measurement across the front wheels.  Than I bought a 5' x 10' steel sided utility trailer with a ramp.

Upon driving my UXV 500 up the ramp I discovered that the rear wheels were too wide.  You'll need 62 inches inside width to avoid scuffing the side walls of the rear tires.  I had measured the trailer and it came in just over 60 inches but in no way was that enough to drive it on.  Had to exchange the trailer for a 6'x 10' model (Diamond C)
