I have a 2006 people 150 that's in great shape(or so I thought) has about 4,000 km on it, perfect maintenance record. My issues started out by it becoming more and more difficult to start(or rather took longer and longer to finally catch). Then the speedometer stopped working(possibly unrelated). After about a week and half the harder starts became near impossible(super temperamental, but still eventually started). Then it died on me while idling at a stoplight. I pushed it home and still wouldn't start. It has since been sitting for a couple months. I've given it an oil change, replaced the air filter and spark plug(both looked okay but it was a stab in the dark to fix the issue). The battery still maintains the correct charge. An after all that its started right up! I drove it for a couple days, then it died on me idling at a stoplight again. Any insight would be a great help!

Looks like that may be the issue! Any advice on how to check what needs to be fixed or replaced? There's only one motorcycle repair place near me and they're ridiculously expensive, i'd prefer to fix it myself if possible.

Check all the vacuum lines for leaks. Clean the carburetor. Have the valves been adjusted? You are correct that the speedometer has nothing to do with this issue. It is a simple mechanical cable.
